Love peanut butter eggs? This version of peanut butter eggs is packed with protein but you'd never know it because it tasted just as good as the real thing! Super easy to whip up they are a great springtime or anytime dessert!
1-4tablespoonscoconut flouroptional, only if using drippy natural peanut butter
Instructions
Mix peanut butter, maple syrup, and vanilla protein powder until soft dough forms that you could roll into balls. Roll 10 balls and then flatten and form into egg shapes.
Melt chocolate chips and coconut oil in the microwave. (Microwave for 10-30 seconds, stir, and repeat until fully melted.)
Dip each egg in the chocolate, covering egg completely and place on parchment or wax paper in a pan.
Refrigerate for one hour until chocolate hardens then serve!
Notes
I found this recipe works best with no stir peanut butter like peanut butter and co.
If you use natural peanut butter you will need to add coconut flour to the recipe - 1 tablespoon at a time until it becomes dough. Note, this will change the nutrition facts of the recipe.
