Make a batch of honey chipotle sauce by combining all the sauce ingredients in a food processor or blender and blend until smooth.
Dry wings off with a paper towel.
To cook wings on the grill (method 1):
Preheat grill to 450F.
Add wings to grill and cook for 3-5 minutes. Flip wings and on the cooked side brush on sauce. Let the wings finish cooking (check temp to make sure they reach 165F.) Flip them again and brush with sauce. Flip one more time, let cook 1-2 minutes then remove from the grill. Toss wings with any leftover sauce (that didn't touch raw chicken.)
To cook wings in the oven (method 2):
Preheat oven to 425F.
Spread wings out evenly on top of an oven-safe GREASED cooling rack on top of a foil-lined baking sheet. (For four pounds chicken you may have to use two baking sheets.) Spray the face upside of the wings with cooking spray. Cook for 40-45 minutes. Flip after 20 minutes. Optional broil to finish for 2-5 minutes to make them ultra crispy. Toss with honey chipotle sauce.
To cook in air fryer (method 3):
Preheat air fryer to 400F.
Toss wings with a bit of oil (not a lot a teaspoon or two) or spray with cooking spray. Air fry at 400F for 25-30 minutes, flipping halfway until crispy and internal temperature reaches 165F. For four pounds of wings you will likely have to work in several batches. Once they are done, toss them with your honey chipotle wing sauce!
