almond flour

coconut flour

cassava flour or tapioca starch

baking powder

teaspoon
baking soda

salt

lemon juice
from about 3 lemons

eggs

honey

cup
melted coconut oil

cup
blueberries
fresh or frozen

poppy seeds
Instructions
Preheat oven to 350F. Line a 9 x 5 bread pan with parchment paper.
In a large bowl combine almond flour, coconut flour, cassava flour, baking powder, baking soda, and salt.
In a medium-size bowl, whisk together lemon juice, 3 eggs, honey, and coconut oil.
Add wet ingredients to dry ingredients and mix until combined.
Fold in poppy seeds and then blueberries.
Add dough to bread pan and bake for 55-65 minutes until top is slightly golden brown and an inserted toothpick comes out clean.
Let cool 10 minutes before slicing into it.
Notes
Use frozen or fresh blueberries or sub other frozen berries that are the same size.
