Five Ingredient Pasta with Sausage and Spinach

- ½ tbsp olive oil
- 1 onion, chopped (optional)
- 2 cloves garlic optional
- 1 lb Italian sausage meat mild or spicy
- 8 ounces chickpea pasta whole wheat, brown rice
- 16 ounces canned diced tomatoes
- 4 cups fresh spinach
Cook pasta al dente.
Saute onion and garlic until translucent and tender (optional). Add ground meat ot the skillet and break up. Cook all the way through.
Add diced tomatoes and cook for 2-3 minutes. Add in pasta.
Working in batches, add in the spinach, stir until wilted, repeat with remaining spinach.
Salt and pepper to taste and enjoy!
