Antipasto Salad

Antipasto salad is the easiest most delicious salad to throw together to serve up or bring to a potluck.

Ingredients

  • 3 cups salad greens
  • 2-4 ounces uncured turkey or regular pepperoni
  • 1-2 ounces  sundried tomatoes 
  • 1 can black olives  small can
  • 1-2 ounces uncured pancetta or bacon 
  • artichoke quarters I used canned

Instructions

  •  Cook pancetta or bacon.
  •  Arrange desired toppings on top of salad greens.  
  •  Use sun-dried tomato oil as dressing.
