Antipasto Salad

Antipasto salad is the easiest most delicious salad to throw together to serve up or bring to a potluck.

Ingredients

  • 3 cups salad greens
  • 2 - 4 ounces uncured turkey or regular pepperoni
  • 1 - 2 ounces  sundried tomatoes 
  • 1 can black olives  small can
  • 1 - 2 ounces uncured pancetta or bacon 
  • artichoke quarters I used canned

Instructions

  •  Cook pancetta or bacon.
  •  Arrange desired toppings on top of salad greens.  
  •  Use sun-dried tomato oil as dressing.  

Notes

I was so happy to find the above sun-dried tomatoes at sprouts - they were soaked in olive oil and had no weird preservatives.  I also used uncured turkey pepperoni I found at Whole Foods, you could use regular uncured turkey pepperoni I just wanted to balance out the rich flavor of the pancetta with something a little lighter in calories and fat.  I also got the pancetta at Whole Foods, it was uncured and free of preservatives.
