Meatball Marinara Stuffed Delicata Squash Boats

These delicata squash boats are roasted to perfection then stuffed with slow cooker turkey meatballs in a rich marinara sauce for a delicious healthy dinner!

  • Make Slow Cooker Turkey Meatballs
  • When you have 30 minutes of the turkey meatballs cooking, preheat the oven to 400F. Line a baking sheet with foil and grease foil. Wash and dry delicata squash. Cut off the stem end and then cut the delicata squash in half (lengthways) and remove the seeds. Place face down on a baking sheet and bake them until tender, about 20 minutes.
  • When delicata squash is done, fill each boat with 3-4 slow cooker turkey meatballs.


*I think you should make my Crockpot Turkey Meatballs, because they are bomb AF.  Yep, that good!  But, if you don't want to pull out the crockpot then you can use any meatball (turkey, beef, chicken, etc) tossed with about 2 cups of your favorite marinara sauce.
