This salad is super simple to make and features salty bacon with sweet peaches tossed with a tart and slightly sweet apple cider vinaigrette.

Ingredients

  • 10 slices bacon cooked
  • 3 peaches sliced
  • 8 cups arugula 7 ounce bag
  • 1/2 cup chopped almonds
  • 1 cup blueberries

Apple Cider Vinaigrette

Instructions

  1. Cook the bacon. (If you don't buy precooked bacon.)

  2. Make the dressing by whisking together olive oil, apple cider vinegar, and maple syrup.

  3. Toss arugula with dressing and then top the arugula with the remaining ingredients.
