Instructions

  1. Preheat oven to 400F.  Grease a 9 x 13 casserole dish with avocado oil.  

  2. Add sweet potatoes, zucchini, enchilada sauce, yellow onion, chicken or turkey, and 1 cup of cheese in the casserole dish.  Mix it so it's evenly distributed and coated well in the sauce.  

  3. Sprinkle the remaining cup of cheese on the top of the casserole.  

  4. Bake for 45 minutes or until the sweet potato chunks are tender.  

  5. Garnish with cilantro, green onions, avocado, and black olives as desired.
