Butternut Squash Feta Quiche

  1. Preheat oven to 400F
  2. Toss squash in oil and garlic salt, bake for 15-20 minutes until tender.
  3. Remove squash from oven once it is tender and reduce heat to 375F.
  4. Grease 9 X 13 oven safe casserole dish and evenly spread out squash on top of it. Next layer in the feta. Sprinkle seasonings on top.
  5. Pour 2 cups of egg whites over the top.
  6. Bake until set for 35 to 45 minutes (mine took closer to 45).
