For the dressing: See Goat Cheese Dressing
Pour vegetable broth in slow cooker.
Trim pork of excess fat. Then, poke holes and slits throughout the pork and fill with the holes with garlic and the slits with apples. Sprinkle the top with fine sea salt. Cover and cook on low for 6-8 hours or high for 4-6 hours.
Once the pork is done remove from slow cooker using a slotted spoon.
Assemble salad(s) with lettuce, cranberries, carrots, and sliced apples (ingredients listed are for ONE salad, add as much meat as you would like). Top with your favorite dressing or Goat Cheese Dressing
