Kiwi Lime Chicken

  • 2 limes
  • 1 clove garlic
  • 1/4 inch ginger or 1 tsp ginger powder
  • 1 kiwi
  • 1 small bunch cilantro - half cup chopped
  • 1/4 teaspoon salt
  • 3/4 cup water


  1. Make marinade by blending all marinade ingredients in a blender.
  2. Add chicken to marinade in a large zip lock bag and refrigerate for at least 2 hours (up to 24 hours.)
  3. Grill chicken or pan fry. To pan fry: add oil to a large non stick skillet over medium high heat, add chicken and 1/2 the marinade to the skillet. Cook chicken on each side for 8-10 minutes, covered. Should reach an internal temperature of 165F.
