Add all ingredients to crockpot. Cook on high for 4-6 hours or on low for 6-8 hours. You can shred the chicken at the half way point in before serving.
Serve in lettuce wraps, cauliflower rice, quinoa, brown rice or whole wheat pita bread. They would all be good options!
*Note- you could easily throw in whatever chopped veggies you have on hand, I think bell peppers, carrots, and potatoes would be delicious additions. However, I was going for simple and three ingredients here!
