These stuffed baked apples are a PERFECT dessert when you want a treat that’s a bit on the healthier side!
Hello friends! Today, I’m bringing back an HH classic from 2017. These stuffed baked apples are to die for! These baked apples are like having the crumble topping of an apple crumble or crips stuffed into the apple itself and baked to perfection. So, basically, it’s absolutely delicious!
I like to keep some extra honey on hand for garnish/drizzle after they come out of the oven. And I wouldn’t judge you if you plopped a big old scoop of ice cream next to them for an a la mode experience. I definitely have. If you are looking for a super easy dessert that’s on the healthier side this fall, you’ve got to try these. They are quick and delicious, and everyone will love them.
And honestly, this recipe has all the deliciousness of dessert with the whole foods ingredients to qualify it for breakfast. Pair it with some Greek yogurt and eat the leftovers for breakfast! Either way, let me know if you try them!
How to Make Stuffed Baked Apples
One of the reasons this dessert is so amazing is how quickly it comes together. You will need to core your apples, but the trick is not to core them all the way through. You want to leave a layer of apple in the bottom so you can stuff the apples without the yummy stuffing falling through. Because this can be kind of tricky, and some bottoms may be thinner than others, or you may accidentally cut all the way through the apple. I like to line the apples with a tablespoon of oats first before adding any filling.
Next, you’ll make your filling. I used a basic mix of nut butter, oats, and honey. But, there are lots of swaps here so check out the next session for tips on swapping!
Once you have your filling ready, you’ll stuff it into the apples. Add a few more oats on top for garnish (this will add a nice crispy layer on top.) Then bake covered for 40-50 minutes. Uncover your apples and broil for 1-2 minutes for that extra crispy look. That’s it! Let them cool and dig in!
Swaps and Substition Ideas for Stuffed Baked Apples
This recipe is so great because it has a four-ingredient list, and all the ingredients are swappable! It’s already gluten-free, dairy-free, and vegetarian, so it will work for most people.
- Apples – I used gala, but you can use a sweeter or less sweet apple if you prefer a change. Any apple will work, even Granny Smith, if you are into more sour desserts!
- Sunflower seed butter – using sunflower seed butter makes these apples allergy-friendly for most people. And have you tasted sun butter? That stuff is like crack. But, for a more buttery flavor, I also like salted cashew butter or almond butter. And, of course, you can do peanut butter if it works for you!
- Oats – You can’t swap oats out for anything else in this recipe. But make sure to get certified gluten-free oats if you need oats without any cross-contamination.
- Honey – I love the taste of honey in this recipe, but you can swap brown rice syrup or maple syrup if desired! Those swaps would make this recipe vegan-friendly!
How to Store and Freeze Stuffed Baked Apples
To store: store in an airtight container in the fridge for up to five days. Reheat in the microwave. They may kind of fall apart, but it will still be delicious, I promise!
To freeze: you can freeze stuffed baked apples, but the texture will change in the freezer. Make sure they’ve cooled completely in the fridge overnight is best before transferring them to a freezer-safe container and freezing. Freeze for up to 60 days. Defrost under refrigeration and reheat in the microwave. Since they may end up a little more watery than you would like, you may want only to freeze them if you will save them for ice cream topping later or something like that. They probably won’t be as appealing on their own after freezing. But, if you try it, let me know!

Stuffed Baked Apples
Ingredients
- 4 medium-size apples gala, or any
- 1/3 cup sunflower seed butter or other nut/seed butter
- ¼ cup honey or maple syrup/brown rice syrup for vegan
- 10 tablespoons oats
Instructions
- Core the apples. I just used a knife and cut out the middle.
- Place the apples on a parchment-lined pan. Add one tablespoon of oats to the core of each apple, essentially creating a plug.
- Use the remaining oats, sun butter, and honey to create the filling by mixing them together.
- Stuff each apple with a heaping tablespoon of filling. To garnish, sprinkle with additional oats.
- Cover apples with foil and bake for 40-50 minutes at 350F. Once the apples are super tender, broil them for 1-2 minutes until the tops get crisp.
- Serve immediately!

Well these sound perfect for the large bag of apples i pick this weekend. I don’t do diets or cut anything out. Everything in moderation for this looney. If I don’t deny myself i don’t crave it I just watch portion size.
