Hey, Friends! Happy Monday! OMG we finally made it, we are out of the temporary apartment and in our new house. Sometimes I thought the day would NEVER come, seriously, I did.
Thank you to all my readers who dealt with sporadic posting and all my clients who were more than gracious as well as patient during this time. I finally feel like I can breathe a sigh of relief.
Of course, not everything is perfect, we have a few renovations to do. I’ve come to terms with the fact that these won’t be happening overnight, I’ll just be happy if they happen by the end of September. #goals Until then my kitchen table will serve as my pantry.
Right now, I can’t worry too much about that though because I’ve got to start prepping my stuff for classes. This semester I have one late night class backed up to an early morning class the next day. I know I won’t feel like cooking in the morning after I get home so late the night before.

PS In addition to a smoothie base I think these make awesome portable protein shake starters. I despise the taste of water and protein shakes so having this shelf-stable bottle to combine with protein powder whenever I want is totally going to be a lifesaver!
The base of this smoothie can be one bottle of Almondmilk and Cashewmilk with Caramel Bottles or Silk® Unsweetened Vanilla Almondmilk Bottles. For mine, I used the unsweetened Almond milk and sweetened my smoothie with dates for a caramel taste. Mr. Hungry despises the taste of dates, so he got the caramel bottle. (I put the recipe modifications in the notes section, this will change the nutrition facts though.)
Now that I’m energized/ ready to tackle the day it’s time to get a workout in and play catch up! Attempting to resist the urge to impulse purchase things I think I need for the house. Sometimes I feel like online shopping is a lot like calories.
It’s easy to order not that easy to return, just like it’s so much easier to eat more than you burn right? This is what I think about when I look at the pile of Amazon purchases I need to return! Hope you have a great week!

Salted Caramel Coffee Smoothie
- 2 Medjool dates
- 1 scoop collagen
- 1/2 frozen banana
- 1 tablespoon almond butter
- 1 bottle Silk® Unsweetened Vanilla Almondmilk Bottles
- 1 tsp instant coffee
- 2 cups ice
- 1-2 shakes course sea salt
- Add all ingredients to a blender and blend until smooth.
