In a meal planning rut? Â In the past, I used to include what was on my meal planning, but nowadays I’m doing so much recipe development I hardly get the chance to remake anything. Â So, my meal plan ends up being a list of new recipes you won’t get until the following week or later, that isn’t helpful! Â So, I’ve decided to institute a Sunday series for your meal planning pleasure! Â It’s just five healthier dinner options to give you ideas on what to put on your meal plan! Â I’ve included one breakfast idea that you can easily meal prep and five dinner ideas. Â My thought is to use leftovers for lunch, happy Sunday meal prepping!

My MIL makes this one so often, I had to put it on this list for the first Meal Plan week!
Sunday Meal Prep: Â Meal prep your quinoa so you can throw it in the casserole the next day. Â You can also meal prep your ground turkey as well. Â
Easy Almond Crusted Fish/ Fish Tacos (gluten-free/paleo)
Tip: Make sure your fish is defrosted. Â
Pulled Pork Salad (gluten-free/paleo)
This one uses the crockpot so you are good to go. Â If you want you can prep your veggies ahead of time such as sliced apples, wash lettuce, etc. Â
20 Minute Spicy Asian Lettuce Wraps (gluten-free/paleo)
Meal Prep Tip – I suggest buying pre-cut chicken breast so this is ready to go. Â You can prep the sauce on Sunday for easier cooking throughout the week. Â
Creamy Hummus Shrimp (gluten-free) – just 3 ingredients!
Defrost your shrimp the night before, buy precooked shrimp to make it easier on yourself. Â Make your own hummus or purchase it. Â
