Last week’s healthy habits challenge was to drink more water throughout the day. As I explained in the challenge post, I consume most of my water from 3pm to 10pm. While I drink enough water (at least 64 ounces), its probably not good to tack it all on at the end of the day. I started to drink more water this week throughout the day and it actually wasn’t that hard. What helped was starting to cut down my caffeine consumption, all of a sudden I was really thirsty when I normally wouldn’t be earlier on in the morning. So, thats is another motivation to continue with this week’s challenge of cutting down caffeine consumption!

Monday

Tuesday
- Breakfast- Green Chile and Cheese DIY Frozen Breakfast Burrito
- Lunch- Salty and Sweet Salad (no picture)
- Dinner- SunButter Lover Smoothie
Wednesday
- Breakfast- Green Chile and Cheese DIY Frozen Breakfast Burrito
- Lunch- Salty and Sweet Salad
- Dinner- French Toast Scramble and was still very hungry so I had a big old bowl of broccoli
Thursday
- Breakfast- Cranberry Date Quinoa Breakfast Bar with sunbutter
- Lunch- Salty and Sweet Salad
- Dinner- Chicken and Asparagus Enchilada Pie & Broccoli, then I was still hungry again so I had some more BEST homemade refried beans and broccoli
Friday
Breakfast- Ugly but delicious French Toast Scramble with sun butter
Lunch- We ordered in for a meeting I had on Friday from Cafe Zupas. I’d never had it before but everyone was raving about it so I was excited to try it. I was a little nervous about the vegetarian sandwich, but no meat on Fridays during lent meant jumping out of my comfort zone. I actually loved it, especially the pesto and sprouts on it. Plus he mango-yogurt dressing on the salad may be the best salad dressing I’ve EVER HAD. I will absolutely be recreating that this summer, oh ya and the macadamia nut cookie was pretty good too!
Dinner was at the in laws Trader Joe’s spring rolls, pesto tortellini, sautéed chard & black bean burger. After dinner we did appetizers in reverse and sampled some TJ’s cheese like the pesto gouda, asiago, and bacon chive gouda… I <3 cheese! Some delicious two buck chuck wine after that was great way to end the week.
Snacks
After Monday I pretty much ate the same snacks over and over and over…
– Muscle Milk Light
– Dark Mocha Almond Chewy Bars (Ya this box is from the wedding, at this point I’m just trying to get rid of them)
– Banana
– Baby Carrots
Some weird things that happened last week… Wednesday and Thursday I was literally the hungriest I have ever been ALL DAY. No matter what I ate I couldn’t stop being hungry (no I’m not pregnant)… in times like these I try to step back and see what’s going on.
- Did I eat enough/Fuel my workouts?
- Are my meals balanced enough?
- Am I stressed?
- Did I drink enough water?
I’m pretty sure it had to do with scaling back on the caffeine and a little extra stress (buying a house will do that), so weird.

It’s strange when that happens, being unexpectedly extra hungry for whatever reason. I noticed that on Sunday when I was extra stressed out from doing taxes.
