Hi Friends! How is your week going so far? Mine is FLYING by, so much to do so little time. I’m working on finishing up my MRT/LEAP training, planning on ordering the test today and getting two fantastic recipe posts ready for you! I’m REALLY excited about them! It’s been a busy week already but I was kind of geared and ready for it.
This week I felt like recording my meals Monday and Tuesday so that’s what I did. For the month of June my goal is to shift toward the least processed food as possible. I’m not making a big detox deal about it, just seeing where I can cut back or make different choices to less processed. This week I included two days, I didn’t get full pictures of any one day but combined maybe I did!
Monday Meals
6:30-7;45AM Travel to Gym and back – run 6 slow miles while watching Friends on Netflix. The one with where no one is ready and the one with the chicken pox – cracks me up every time.
8:30AM Egg Whites With Spinach on Angelic Rye Bread with Laughing Cow and Ketchup
11:30AM Chocolate Chip Cookie Protein Bar
12:30PM 1 Spoonful of PB – got the unsalted —> effort to move to less processed.
4:00PM Turkey Breast & Pepper Salad + 1 Yogurt
7:00PM Green Smoothie – 1 Scoop Protein, 1 small frozen banana, 1 cup unsweetened almond milk, 1 cup spinach (unpictured)
Snacktastic Tuesday
5:45-6:30am Walk the Pup
6:30 – 7:30 Nike Trainer Workout
8:00AM Egg Whites With Spinach on Angelic Rye Bread with Avocado & Ketchup – ate it straight out of a napkin no picture but you’ve got Mondays. I switched to the avocado in an effort to be “less processed” than laughing cow cheese!
11:30AM Snack on cucumber, carrots and cabbage doused with Bragg’s Apple Cider Vinagrette
12:00pm Felt like peanut butter so decided to include some veggies with a snack of organic celery and peanut butter
1:30pm Kirkland Protein Bar on the way to meeting a client
4:30pm 1.5 Cod Burger with more salad before I went to teach group training and forgot to snap a photo
7:15pm 2% Yogurt With Stevia – I’ve been doing the protein shake because it’s so filling but opted for the yogurt —> less processed. and a handful of walnuts (unpictured)

Hey Megan, for Oxford/LEAP training you do have to be an RD to go through their training. I’m email you some additional info 🙂
