In my house, leftover turkey makes enchiladas get made every single year. This tradition was passed down from Mr. Hungrys family, and because of it, I look forward to Thanksgiving. I’m not a fan of Thanksgiving food. I don’t hate it. It’s just that once a year is enough for me.
Mr. Hungry, on the other hand, happily eats it at any time of the year. Like his favorite fast-casual restaurant is Boston Market. And he LOVES that we have two Thanksgivings each year. About 1-2 months before Thanksgiving, I start developing healthy Thanksgiving recipes including healthy Thanksgiving side dishes and Healthy Thanksgiving Desserts. Then I make a turkey and develop some new healthy Thanksgiving leftover recipes! Then just a few short weeks later, we have a real Thanksgiving.
By real Thanksgiving, I’m sick of traditional Thanksgiving food, but leftovers, I could have all the time. Especially since I tend to douse said leftovers in enchilada sauce in various ways, as you will see below!
