Hi, friends! How was your week? Did you have to go back to work after the holiday weekend or did you somehow squeeze in more time off?
I’ve got some good news, we put another offer on a house and it was accepted right away! The last house we had to wait days and days and days until literally five minutes before our offer was expired to get accepted. For every point in the process they waited the FULL time to respond to us, it was extremely annoying and incredibly anxiety inducing. It’s nice to work with sellers who are quick to respond, open, and seem honest. The lady said she hasn’t seen a scorpion in 25 years that she has been there!!! As one of my best friends said, God Bless her. I just wish there was a way to warn others about the scorpion infestation in that other place, but there isn’t, as the old saying says “buyer beware.” Scary.
Now for the bad news, our buyers couldn’t extend our contract out so everything is going to storage and the four of us (Mr. Hungry, Nala, Missy and I) are headed to a 600 square feet apartment for 30 days. I’m currently photographing recipes like CRAZY! My goal is to get up two per week from now until the end of August. Many of you said you want more nutrition topics and day in the life posts so I’ll do more of those. I’ll likely kill the meal plans until we get settled in September because 6 days a week is just too much with all that going on. I’ll be sure to reshare old meal plans at the end of this post and in the emails so that you still have ideas. I mean you probably don’t remember what was on meal plan one from 4 months ago right? My thoughts exactly! So I’ve got to get cooking, if you are hungry, come to my house I’m making food like a mad woman!

+ 40-60 minute walks with Nala pup all week!
Guess what! One of my favorite blog recipes got a new video! I’ll likely be making this healthy 20-minute summer enchilada skillet at the apartment often! PS I always get asked where I get my chorizo at. I get my chicken chorizo at Sprouts in the bulk meat section and turkey chorizo at Whole Foods in the frozen meat section.
Not that many links this week, I’ve been a bad blog/news reader. I can’t imagine why!
