Chicken Avocado Salsa Verde Salad

. Last night I used the rest of the COSTCO pack of canned chicken that Paul bought before I moved back from California to make our lunches for today. I’m not knocking on canned chicken breast too much, aside from it’s sodium content it’s a pretty healthy convenient food. I just prefer less processing and fresher ingredients. However, we were running low on lunch items so I decided to use the last can to make our lunch with. Avocado’s are really high in potassium which offsets the negative effects of sodium in our diets, so I used them to add some healthy fat and potassium instead of mayonnaise to make the salad base, along with some salsa verde for extra flavor.

Ingredients:
1 Large Can Chicken Breast (or one grilled and diced Chicken Breast)
1/2 avocado
1/4 cup salsa verde (Trader joe’s)
1/2 cup shredded carrots
Directions: Mash avocado and mix with salsa and shredded carrots, eat on sandwich, in a whole wheat pita, in a wrap, plain…whatever you like!
Lunch Packing Tip: To keep your sandwich from getting soggy, put lettuce on both sides of the bread.
If you’ve been reading the last week or so you know what I’m off to do… UNPACK our house. Right now all we have set up is the exercise room, last night we ended up going to Costco instead of unpacking so tonight is unpacking extravaganza because tomorrow is for watching our wildcats in the tournament!
