Taco Tuna Quinoa Sliders
Okay now let’s get to the Redux Challenge shall we? It’s a good one! Mostly because I’ve made these Tuna Cakes 237402384023850945304593480583490582 billion times, they are insanely easy to make and are amazing. I literally couldn’t keep them in the house long enough to get a picture.

One day a week or two ago Mr. Hungry declared “no more quinoa, I can’t do any more quinoa, NO MORE!” Well, that wasn’t going to happen because I had a huge batch of it pre-made and no other healthy carbohydrate source to substitute. Then I had an EUREKA moment, I’m going to bake them into sliders that won’t even be recognized as quinoa!
Since Mr. Hungry also would like a long break from tuna salad I figured I could use the tuna up by adding a can in for some healthy lean protein. After that, I went and taco-fide them, which is literally the best part of the whole thing. The result? Mr. Hungry has been asking for some of those yummy taco cakes! This is how I feel about that ——> I WIN I WIN I WIN!
These Taco Tuna Quinoa Sliders are the ultimate make-ahead protein-packed lunch, snack, or whenever option. They are freezable so you can make a million of them to have whenever you want ( like I finally decided to do!) Did I mention they are only five ingredients? Simplicity for the win!

Taco Tuna Quinoa Sliders (RR April 2016)
Ingredients
- 2 cups quinoa cooked
- 1 5 ounce can drained wild albacore https://amzn.to/2HnudCH
- 2 eggs
- 2 laughing cow wedges garlic and herb or swiss
- 1 tbsp taco seasoning
Instructions
- Preheat oven to 350F
- Combine all ingredients in large bowl, mix till well combined.
- Oil/spray or use liner for your muffin tin.
- Divide mixture into 12 cakes and bake for 30 minutes.
- Let cool 10 minutes before removing from muffin tin.

Could you replace the tuna with chicken mince or beef mince?

I’m not sure about mince, but you could probably do canned chicken!
