Monday
Mondays breakfast and lunch were recapped here.
Dinner was grilled chicken on the George Foreman, sweet potatoes and green beans. I recently wrote about how the George Foreman is one of my favorite kitchen tools but I’ve never grilled chicken on it, so I decided to give it a try. Easy peasy, I just wish I would have marinated it first because it came out a bit bland.
Tuesday
Breakfast and lunch were recapped here.
Dinner was this delicious taco themed salad with salsa, grassfed organic cheddar, mahi burger and crushed vegetable chips, it was a good one!
Wednesday
Breakfast and lunch were recapped here.
Dinner was a shrimp and broccoli omelet with tons of chula sauce! (I was in my crave salt because I wasn’t having sugar mode.)
Thursday
Breakfast was another bowl of overnight oats.
Lunch was “leftovers” of shrimp and broccoli omelet. Really I just made two omelets so I could eat one for lunch the next day.
Dinner was kind of weird, I ate a Larabar before going to the gym.
When I got back I wasn’t that hungry so I just had a pretty plain salad with mahi burgers from costco and mustard.
Friday
The clinics were closed on Friday so I got to stay home! That meant I started off my breakfast my favorite and simple way with scrambled eggs and a piece of toast.
Followed by a broccoli cheddar quesadilla with a side of carrots for lunch!
Part of dinner was from Whole Foods. Mr. Hungry really wanted to try out their chicken pot pie (which he loved and I got a nice ramekin after he was done) so I got some turkey meat to make a salad with. We also split some crabmeat rolls, I can’t say that I was a fan.
And the best dessert ever… BAKED APPLES with almond butter!
I snack a lot too but I’ve been really bad at recording them. Here are a couple pictures…
1/4 bagel and cream cheese
1/2 banana- keep it in the crisper in the refrigerator and the skin gets brown but it stays nice and firm!
Skipping the “Lite” Menu
One thing I’ve wanted to write about for a while was an update on how I chose my meals now that I’m not calorie counting anymore. When I was calorie counting I based every single meal on how many calories was in it, I only ate what I knew the calorie content of and I didn’t order unless it was on the “light” menu. Even after I stopped logging calorie these habits stayed with me for a long time. It took a long time to learn to listen to my hunger and portion size accordingly. I still think it’s important to be mindful of high calorie foods but that doesn’t mean they need to be completely avoided. Now I focus a lot on eating healthy and keep my portion sizes under control (I eat till I’m no longer hungry not till I’m full.) One of the biggest benefits I’ve found is that I actually get to save food when I get full and eat the rest later. Before I’d get something on the lite menu and inhale the whole thing. Like last weekend when we went to Cheddars, I was between something on the lite menu with the calories listed and a dish not on the lite menu. For the first time in a long time I chose the dish not on the lite menu. We had appetizers and we were all sharing bites of our dishes so I ended up eating about 1/3 of it. I got to have the rest the next day for dinner which made me really excited. I’m not saying that I never order off the lite menu, if I see something on there I want I’ll get it. I’m just saying I’m not bound by it anymore. I’d say that I calorie counted for 2 years and it took me equally as long of not logging calories to realize they aren’t the most important part of a meal.
