Happy Friday friends! I’ve got a TON of meetings today so I’ve got to get to tackling everything and get my sh!t together.
This week has felt a little hectic since we decided to stop letting Little Man nap in the swing (he can wiggle out of it) but we are adjusting! I’m definitely planning on enjoying a couple of glasses of wine this weekend and congratulating myself for making it through this nap strike week! I hope you have a wonderful weekend!
Food
I modified this oatmeal bake to be egg free and ate it this week!
I didn’t take a lot of pictures this week because most of what I ate was for upcoming recipe posts! So here are a few sneak preview photos!
I also made my instant pot egg roll in a bowl this week again! This time I made it with chicken, instead of the pork that I used to photograph it. Sorry no “real life” in the moment photograph, you’ll have to settle for the pretty one again.
Oh, and it wouldn’t be a week if chipotle didn’t make an appearance right? (recycled photo because I get the same thing every time) just add guac to this photo.
Fitness
I only got 3 workouts in last week – I was definitely having an off week motivation wise. I have all kinds of excuses, including that I hurt my wrist or thumb, or I’m not really sure, somehow (not sure if it was carrying the baby, working out, or a combo) and the baby took really short naps but those are just excuses. My thumb doesn’t stop my legs from moving and there were times I had to work out that I chose not to, because I didn’t want to work out at night. Sometimes when I have an off week the rest feels good, like I really needed it. However this week wasn’t one of those times, the off week coupled by not so great food choices made me feel worse, not better.
Back in the day, a week like this could easily spiral into a billion other weeks like this. If the train wreck is already going why not just keep it going, right? NO! Nowadays, I’ve been working out consistently for long enough to know that I’ll get back on the train this next week and keep doing whatever I can do. Feeling crappy is a reminder of how good I can feel and why I workout and eat healthily.

Sunday – 4-mile endurance treadmill run with aaptiv (I’ll talk more about this next week!)
Mon-Wed – Off
Thurs – 3-mile treadmill run with aaptiv

I actually baked these and meant to take a picture but forgot! They were pretty good but I think I did something wrong because mine spread out pretty far, vegan baking is confusing! They were delicious though!
