Hi, friends! Welcome to the bandwagon if you haven’t already jumped on, it’s time, friend. It’s time! At some point during my pregnancy, when my food aversions finally started to let up, I started eating more food. However, bread was still a mainstay in my diet. I craved things like avocado toast, peanut butter toast, grilled cheese, and veggie sandwiches.
If I wasn’t careful, I could eat bread all day long every day. While I don’t think bread is unhealthy, I don’t think eating it for every meal is ideal either. That’s not exactly moderation, not even for a pregnant woman. So, I started to experiment with sweet potato toast (SPT) recipes.
I found that by swapping bread for SPT once a day, I could get more nutrients in and decrease my reliance on bread. (Sweet potatoes have way more nutrients than bread.) Mr. Hungry even got on the SPT train. He actually loved it since he doesn’t do that well with gluten or yeast anyway.
I preshot this recipe when I was being obsessed with SPT over the summer and felt like I should wait till the fall to share it. Since sweet potatoes are more “in season” in the fall! I also added all these recipes to WTE? Alright, so let’s get to it! Here are my top four SPT recipe picks!

Pick Your Sweet Potato Wisely
First of all, do not be afraid to use whatever color sweet potato your little heart desires. Second, consider what you want your sweet potato to hold.
If it’s one of the heavier recipes like eggs or cottage cheese, get a big fat sweet potato that will look a little more square when sliced (like the purple on the right.)Â If your toppings won’t be that heavy, long skinny ones will work too.
Keep in mind that the long skinny sweet potato slices may not fit in your toaster so you may have to use the oven.
Method
Below I share two methods for making SPT. I will say that I much prefer the result of the toaster over theBlack and Decker TO1313SBD 4-Slice Toaster Oven toaster oven. Maybe it’s just me, but, it just feels more like toast when it comes from the toaster.
However, I prefer the convenience of the toaster oven (not having to listen for the toast to be done only to run over and press it down into the toaster again.)Â Both ways will get you what you are looking for.
Plain Sweet Potato Toast Recipe
Ingredients
- 1 slice large sweet potato 1/8 to 1/4 inch thick
Instructions
Toaster Instructions:
- Place your sweet potato slice into the toaster. Turn the toaster all the way up as high as it can go. Toast the slices until they are fork tender and browned. This took 3-4 cycles for my toaster, each time it pops up I flipped my slice of sweet potato for even cooking.
Toaster Oven / Conventional Oven Instructions:
- Cook the slices at 400F for 15-25 minutes, turning once. They should be browned on both sides and fork tender when you are done!

Blueberry Cottage Cheese Sweet Potato Toast
Ingredients
- 2 slices plain sweet potato toast
- 1/3 cup cottage cheese
- 20 blueberries
- 1 tbsp honey
Instructions
- Follow the recipe instructions to make sweet potato toast.
- Top each slice of SPT with 3 tbsp cottage cheese, 10 blueberries, and 1/2 tbsp honey.

Egg & Avocado Sweet Potato Toast
Ingredients
- 2 slices plain sweet potato slices
- 2 scrambled eggs
- 1/2 avocado sliced
- sprinkle salt and pepper
Instructions
- Follow the recipe instructions to make sweet potato toast.
- Make scrambled eggs. Top each slice of SPT with 1/2 of the avocado slices (so 1/4 of the avocado) and 1 egg. Sprinkle with salt and pepper! Enjoy!

Ingredients
- 2 slices plain sweet potato toast
- 2 tbsp nutella
- 10 strawberries cut into quarters

- Follow the recipe instructions to make sweet potato toast.
- Top each slice of SPT with 1 tbsp Nutella and 5 strawberries.

Coconut Raspberry "Cheesecake" Sweet Potato Toast
Ingredients
- 2 slices plain sweet potato toast
- 1/4 cup whipped cream cheese
- 1/4 cup raspberries
- 1 tbsp shredded coconut
Instructions
- Follow the recipe instructions to make sweet potato toast.
- Top each slice with 2 tbsp whipped cream cheese, 2 tbsp raspberries, and 1/2 tbsp shredded coconut. Enjoy!
