Hi, friends! Look what I got for you! I know, you were probably starting to think that that Hungry Hobby isn’t a recipe blog anymore. I finally got my new tripod, and like any new equipment at first I was super frustrated with it, but once I jumped in and started working with it, I figured it out.
I ended up photographing this recipe twice. Why? Because I got chocolate all over the popsicle sticks and let the bananas melt into an unappetizing mess. #rookiemistakes
That just meant I got to make these again! I will say though like anything smores related this recipe is a bit messy to make. Anytime you are working with melted marshmallows; I think it’s fair to say things will get a little sticky. See what I did there?
But FOR real! It will get a little messy so be prepared. I think it will be a little easier if you aren’t working alone and can do the assembly line thing, spread, dip, roll, and refreeze in one motion. Since I was making them by myself, it wasn’t quite as easy.
I had to spread the marshmallow creme over all the bananas, return them to the freezer, and work on getting the melted chocolate and graham cracker crumbs ready. So having to set them down again was kind of annoying and a little messy. But, still, it’s smores, I feel like that’s appropriate.
And the final product was OH SO WORTH IT! I mean I LOVE frozen bananas. Confession, before my tripod broke, I was going to shoot this recipe many weeks ago. I ended up eating plain frozen banana halves from the freezer every night for dessert.
Frozen chocolate covered bananas reminds me of Grad school when my roommate and I would treat ourselves to the ones from rocky mountain chocolate factory. ERMYGAWD, they were so good! But then again, I’ll eat a plain one on a stick so my viewpoint may be skewed a bit.
Speaking of viewpoint, before you judge me for you using marshmallow creme in a recipe, hear me out. I tried to make my own out of “healthier” marshmallows, and I failed. IT WAS SO MESSY and didn’t really work. So I looked up the ingredients for marshmallow creme and decided, it wasn’t that bad.
The most offensive ingredient is corn syrup. Although it’s something I don’t like to use on a daily basis, it is allowed to enter my diet on special occasions. Like for these smores frozen bananas and pecan pies at Christmas. So that’s how I feel about that, but you do you, rock on Buttercup!
Alrighty, let’s talk ingredients:
Bananas – refer to the picture above, make sure they are appropriately ripe. Too green and they will be too starchy to sink your teeth into when frozen. Too ripe and you won’t be able to coat them with the marshmallow creme. You want them to be just yellow with just a few spots!
Marshmallow Creme – I tried making my own at home with “healthier” marshmallows, and it was a disaster. Just buy it, it’s worth it. I used jet-puffed, and I have not tried other brands.
Chocolate Chips – You can use whatever kind you want, as long as it melts. If you are feeling a little healthier, you can use dark chocolate chips.
Graham Crackers – I used gluten-free, but you can use regular. You can also just buy graham cracker crumbs and skip the grinding them yourself step!

Ingredients
- 5 bananas ripe
- 7 ounces marshmallow creme
- 1 cup chocolate chips
- 6 graham crackers I used gluten free
- 10 popsicle sticks
- wax paper
Instructions
- 1. Day 1: Peel all the bananas and cut them in half. Stick one popsicle stick into the cut side of each banana, about 2 inches inside the banana. I froze mine in a few quart-size plastic bags. Freeze overnight.
- 2. Day 2: Use a food processor to grind your graham crackers into graham cracker flakes. Spread out on a shallow dish that you can roll the bananas in.
Option 1: Step By Step
- 3. Cover each banana will a thin layer of marshmallow crème and place on wax paper. Try to keep as many bananas in the freezer at one time, I worked in batches of four. NOTE: the marshmallow crème will not stick to the side of the banana that rested on the shelf in your freezer. That’s fine! Just skip going over that part, and then set the banana back down on the same side after you covered them in marshmallow crème. This will be messy, I found that long strokes worked the best. I used my hands to smooth out the marshmallow crème over the banana like covering a piñata with plaster to smooth it out. Freeze bananas in the freezer while you melt the chocolate.
- 4. Melt your chocolate in a double broiler or in the microwave. If it’s too thick to dip your bananas in, add a little coconut oil so it thins out.
- 5. Dip banana into the chocolate covering completely then immediately roll in graham cracker flakes, return to a new piece of wax paper. Repeat with the remaining bananas until they have all been covered in chocolate and graham cracker.
- 6. For best results return them to the freezer for another day or at least 2 hours.
Option 2: Assembly Line
- 7. If you have helpers you could do this in an assembly line fashion, one person covers with marshmallow, another person dips bananas immediately in the chocolate, another person rolls in graham cracker and then return to wax paper. This would probably work best but I didn’t have this option!
