Hellllllooooo and happy one pan Monday! Today I’ve got a delicious meal for you that I actually made in the apartment, so that’s how you know it’s SUPER easy. If you watched my last Facebook live you saw I have about a half of foot of counter space available for cooking, it’s great.
I feel like I should put a disclaimer at this point, I know many of you live in apartments and are probably SICK of hearing me complain about apartment life. In fact, many of my best friends live in expensive areas in the country where their apartment rent is twice my mortgage, not kidding. I think it’s just the whole thing ya know?
Keep in mind we didn’t get to shop for an apartment, we just picked the first one that would let us do a 30-day lease. Two-thirds of my stuff is in storage, there are boxes and mess everywhere despite my attempts to organize. I’m not dogging on apartment life, I’m dogging on living in a temporary space for 30 days without the majority of my stuff, ya know?
One thing I did bring was the Vitamix, thank goodness so I can make this delicious dairy free macadamia arugula pesto!
The consistency came out a little different than when I originally made it using my food processor, but the taste is delicious! I’m also super excited to partner with Royal Hawaiian Orchards, my favorite macadamia nuts company. Typically I purchase a big bag at Costco and use them in pesto, smoothies, or eat them for snacks.
I just love how rich and buttery macadamia nuts taste while being full of heart healthy fats. It’s the best of both worlds! The Sea Salt variety is my favorite for baking and recipes (they also have natural), but I love to grab a bag of flavored Royal Hawaiian Macadamia Nuts for Mr. Hungry to take to work.
Over the years I bet we’ve tried every single flavor they have! My favorite is the Maui Onion, which I used to garnish this recipe. Mr. Hungry’s favorite is theSea Salt and Cracked Pepper, so good! You can see all their flavors here!
For this recipe, I pan-fried my salmon fillets, set them aside and then pan-fried some carrot noodles from Trader Joe’s. Once they were hot I toss them with a bit of the pesto until they were creamy and shiny, the way pasta should be!
I returned the salmon to the pan and drizzled pesto over top, then placed some of those yummy Maui Onion Royal Hawaiian Macadamia Nuts to garnish.
So easy and so rich, creamy, and delicious. You’d never think this meal was as healthy as it is except for the color of the carrot noodles gives away the fact that you are eating a ton of veggies! Pan Fried Salmon with Macadamia Arugula Pesto
Ingredients
- 4 -6 ounce wild salmon fillets
- 1 tablespoon oil/fat I used grass-fed butter
- 3/4 cup dairy free macadamia arugula pesto
- 12 ounces carrot noodles
Instructions
- Make your dairy free macadamia arugula pesto.
- Defrost your salmon first! You can pan-fry salmon from frozen but it won't taste as good. Heat a large non-stick skillet to medium high with oil. Place salmon skin side down on the pan. Season the flesh side with lemon juice, salt, and pepper. Fry for 3-4 minutes, or until salmon is about half way cooked. Spray or dab a bit of fat on top of the flesh side of salmon. Then, flip each salmon fillet over and continue to fry for 3-4 minutes until cooked throughout.
- Remove the salmon from the pan and set aside. If you purchase pre-made carrot noodles from Trader Joe's you'll need to defrost them. You can do this in the pan or in the microwave, I did mine in the pan. Once they are hot, toss them with 1/4 cup pesto. Return your salmon to the pan, drizzle with 1-2 tablespoons pesto and garnish with extra macadamia nuts.
