Hi, friends! I have a fun little recipe to share with you today featuring Zespri SunGold kiwifruit. Until recently, I had no idea there was such thing as yellow kiwi, did you?
SunGold kiwifruit is a new variety from Zespri, a leader in premium quality kiwifruit. Zespri SunGold kiwis have a yellow flesh and smooth hairless skin, not fuzzy like their well-known cousins, the green kiwis.
When I was originally thinking about kiwi recipes to try, my mind was drifting to refreshing salads, tropical tasting desserts, and smoothies. Then I read that both green and SunGold kiwifruit contain an enzyme called actinidin that helps break down protein. Actinidin occurs only in kiwifruit and improves digestive comfort by increasing the breakdown of proteins and facilitating digestion and stomach emptying.
Actinidin also makes kiwi a great way to tenderize meat, as well as add flavor! You can either spread it over the meat or create a marinade, like the one I made!
I was also surprised to learn that one serving of SunGold (two kiwis) are a good source of antioxidant Vitamin E, provide three times more Vitamin C than an orange and as much potassium as a medium banana! That’s a mini spherical powerhouse if you ask me!
How to tell if a SunGold kiwifruit is ripe:
Hold a kiwifruit in the palm of your hand and squeeze gently. It should yield to slight pressure when ripe.
How to speed up ripening:
Leave SunGold kiwifruit out at room temperature approximately 3-7 days to ripen. Speed up the ripening process by putting kiwifruit in a paper bag with bananas or apples (the ethylene gas emitted by these fruits make kiwifruit ripen faster). Once kiwifruit is ripe, it can be kept in the refrigerator for up to 2 weeks.
Kiwi Lime Chicken
Ingredients
- 1 lb chicken breast
- 1 tablespoon avocado oil
Instructions
- Make marinade by blending all marinade ingredients in a blender.
- Add chicken to marinade in a large zip lock bag and refrigerate for at least 2 hours (up to 24 hours.)
- Grill chicken or pan fry. To pan fry: add oil to a large non stick skillet over medium high heat, add chicken and 1/2 the marinade to the skillet. Cook chicken on each side for 8-10 minutes, covered. Should reach an internal temperature of 165F.

I tried this marinade but substituted lime with lemon and i grilled my chicken. my chicken came out juicy like it always does regardless of marinade but it tastes so bland like no flavor at all. What am i doing wrong? thanks

That’s weird I’ve made this several times and it always comes out DELICIOUS. I will say the longer you marinate it the better though, closer to 24 hours will yield a lot more flavor than 2 hours. I would think that substituting the lemon for lime would be just fine, just a slightly different flavor. Hope that helps!
