Thank you to those of you that sent well wishes on Monday’s post 🙂 Here are a few scenes from this past weekend…
Saturday Morning 8 Miles – Longest Miles I’ve done in a while, felt hot but so good after! The rest of Saturday was spent with Nala at the dog park then out by the pool hanging out around the house with my In Laws.
I also made this awesome mixture of 1 package sweet potatoes ribbons, 1 package brussel sprout shreds and 1/4 cup walnut pesto topped with grilled chicken for lunch!
I could barely wait to get a picture to dig in, I was HUNGRY!
Sunday
I finally wore this dress to mass – I got a few Stich Fix boxes back but didn’t wear because I didn’t like how it looked with tights underneath. (Made the sides poof out way to much.) I love it on it’s own however and it’s super comfy and light weight since it’s already 100+ at 7am.
Sunday we celebrated Father’s Day early before Mr. Hungry’s Dad had to leave which of course included pizza and wings from Rosati’s
I worked on this post and yesterday’s post for a little bit (I always consider it a win when I get some work done on the weekend.) Then I hit up the gym for a Nike Trainer Total Impact Workout, man my legs were TIRED from that run! I was super shaky on everything praying for it to be over. Luckily the gym closed so I had to cut it a little short.
The weights at the rec center are clearly from the stone ages…. it’s pretty awesome!
Monday’s Tempeh Bacon Adventure
6:00am: walk the pup for an hour with my MIL
7:00am: attempt to photo shoot a smoothie, camera dies before I can get a picture
8:00am: drank coffee and worked away at the blog
9:00am: I’m hungry and make myself a good old 2 ingredient pancake with microwaved blueberries, pieces of leftover banana, and sun butter on top- twas delicious! Usually I eat a lot earlier than this but when I take a rest day I’m just not as hungry in the mornings.
I worked away on the blog, wrote the smoothie recipe post, checked my thumbtack messages and requests, submitted photos to food sites, and booked flights
12:30pm: my first attempt at Tempeh Bacon! Honestly, I don’t do a ton of soy but I’m super sick of meat in general right now. My body has been craving more plant based foods, even beans! I’m typically a huge meat, protein, etc eater but all of sudden the craving just kind of diminished, it has been really weird! Maybe it has something to do with the heat? 118 degrees outside is likely to mess with anybodies hunger right? I’m sure it will come back but in the mean time the tempeh bacon was delicious!
Here is what I did:
I used this recipe as my guide and made the following modifications to my marinade 1) 8 ounces tempeh 2) coconut amino instead of soy sauce 3) coconut oil instead of EVOO 4) maple syrup instead of agave 4) omit the cumin, pepper, and salt
Let that marinade for 30 minutes or so then fried it up!
I added it to a grilled cheese sandwich with hummus, munster cheese and tomato slices in the sandwich and on the side, so yummy!
1:00pm: I snacked on the tempeh bacon while making it so I only ended up being hungry for half the sandwich so I wrapped it up and put it back in the fridge. I then made my afternoon iced coffee with 1 scoop collagen and a splash of half and half.
Then it was work blitz time, submit more photos and finish the MRT/LEAP modules was the goal. I already have several clients ready to go for testing as soon as I finish the certification process so this is top priority, I got really close to being done!
6:30pm: Chicken Sausage, Salad with plantain chips as the croutons while I worked on social media and watched the GS vs Cleveland game.
8:00pm: Yogurt and flax bread with peanut butter(working on recipe)
8:15pm: Natural Calm drink
Tuesday
6:00am: walked Nala for an hour with my MIL
7:20am: Kirkland Protein Bar
8:00am: Attempted workout at gym via Nike Trainer which was mostly a fail, I had zero energy and I’m still so sore from the weekend every move hurt. I called it quits halfway through.
9:00am: Grocery Shopping, picked up a few goodies with coupons my friends at Daiya sent us to try!
10:30am: ate an apple before washing and prepping all veggies
11-12:45pm: dealt with my email situation and send out thumbtack quotes while drinking coffee
12:45pm: made a salad with leftover tempeh bacon on top using braggs apple cider vinaigrette as topping – finished with small spoonful of peanut butter
1:20pm made a cup of coconut green tea to sip on while I started this post and then submitted photos of Walnut Pesto Turkey Burgers
1:45-4pm work blitz – sent out a client summary, finished MRT/LEAP food sensitivity modules and ordered test! Also snacked on yogurt mixed with hummus plus orange cauliflower.
4:00pm: brought back the breakfast egg quesadilla! side of bell pepper and stuffed with homemade salsa (thanks to Mama Shallal)!
5-7pm: teach at local gym, drank a protein shake in between classes
730pm: natural calm and finish this post!
9:00pm: lights out!

I went to a vegetarian cooking class last year where they taught us a tempeh bacon recipe and it was SO Good! I need to try it at home! Your sandwich looks awesome 🙂
