Happy Monday Friends! How was your weekend? Sunday over here was the perfect Sunday. Mr. Hungry and I went out for a delicious breakfast at US Egg after mass. I got a egg skillet with bacon and cheese, no potatoes.
I also got a protein waffle, I’m not huge into to pancakes when I eat out because I can make those at home, but waffles… those are my jam.
Mr. Hungry was super excited about his breakfast, a fully loaded skillet and chocolate chip pancakes!
After breakfast we stopped by Whole Foods to pick up some meat and other goodies. I don’t buy everything there but I usually buy my meat there. Yesterday we picked up: Ground Turkey, 2 Pork Chops, Rosemary Lemon Deli Turkey and Grassfed Deli Bison. After Whole Foods we hung around, napped, watched March Maddness, ate our leftovers and watched Birdman. Throw in a few quick chores and workout I’ll share later on this week, all in all it was pretty relaxing!
Breakfast
– Chia Protein Pudding or shakes for Mr. Hungry
– Drinkable Grassfed Yogurt
– Smoothies
– Eggs
– Quest Bars (on early days)
Lunch
Mr. Hungry: Salads with Deli Rosemary Turkey, Ham Steak, or Tuna
Kelli: Ground Turkey Lettuce Wraps, Bison Lunchable, Salmon Salad, Tuna Lunchable
Dinner
Sunday- Shrimp Stir Fry- last nights dinner came together in a flash and was delicious so I thought I’d share!
Ingredients:
Vegetables: 1/2 bag TJ’s pre washed string Green Beans, 1/2 bag of TJ’s pre washed Snow Peas, Red Onion, Two Purple and Two Orange Carrots Sliced with Mandolin, One Leek
Sauce: 2 big spoonfuls of almond butter, 2T coconut aminos (or soy sauce), 3 cloves garlic, 1T Rice Vinegar, 1T Honey or Brown Rice Syrup
Directions:
- Use blender or processor to make sauce.
- Saute vegetables in large skillet or wok in coconut oil for 8-10 minutes until tender. Add in 1lb pre cooked defrosted shrimp and saute for another 1-2 minutes
- Stir in sauce! I added a ton of sriracha and red chili paste to mine.
Monday- Cauliflower Eggs or Turkey Lettuce Tacos (What I had for Lunch Today-leftovers just turkey taco meat cooked with onions and topped with hot guacamole from Whole Foods)
Wednesday- Salmon and Green Beans
Thursday- Baked Pork Chops and Sauteed Kale
Friday- Wing It
Saturday- Brussel Sprouts and Chicken Sausage Mix
