Meal Planning – Adapting the Whole Month Plan (4/20-4/26)

Happy Monday everyone (or probably Tuesday by the time you read this)!  Since I didn’t get a chance last weekend I thought I’d pop in to update on my mini shopping trip and meal plan this week!

Grocery Shopping

Trader Joe’s & Costco

We swung by Trader Joe’s and then Costco Friday night after dinner at Pacific Gardens and picked up just a few things.

Sushi

I did pretty good with my grocery shopping for the whole month adventure, I only needed a few fruits and veggies to tied us over.  The salmon was for Easter and the Larabars were for Paul to take to work with him.

What we have left from the massive grocery shopping I did:

Protein

  • eggs
  • salmon burgers
  • bison burgers
  • turkey burgers
  • chicken tenders
  • chicken chorizo
  • shrimp

Veggies

  • a few carrots
  • frozen stir fry veggies
  • frozen roasted sweet potato
  • frozen spinach

Other

  • bread
  • tortillas
  • cheddar
  • pepper jack
  • goat cheese
  • feta

Plus staple items like nut butters, canned beans etc…

Menu Options

Breakfast

–  Green Chile and Cheese Frozen Breakfast Burritos

–  Einsteins Bagels (thanks to Grandma Wagner bringing a whole bunch over on Easter!)

–  Planning to eat out a couple of mornings this week because I’m going to head across town early and hang out at Starbucks just to beat traffic.  In my opinion time is better spent driving 25 minutes and sitting in Starbucks for an hour versus 45 minutes of heavy frustrating traffic, ain’t no body got time for that.

Dinner

Sunday- EASTER leftovers

Monday- out

Tuesday- Easter Leftovers/Kelli Wing It (Paul’s eating out for a work thing.)

Wednesday- Chicken Chorizo Enchilada Skillet

Thursday– Kelli Out/Paul Wing it or leftovers

Friday- Burgers (Options include Salmon, Turkey or Bison) with Salad

Saturday- Wing it

 

Would you rather wake up early and have a shorter commute or wake up later and commute?

  1. As it is I wake up pretty early and commute at 6;30am. Traffic is already pretty bad at that point, but it gets worse so I’d rather commute early. Maybe if I find a new teaching job for next year I’ll have a shorter commute so I don’t have to take 3 different freeways.

    1. That is EXACTLY how it is for me!!!! 630AM and three freeways and it’s still bad! I hope you get a closer job!
